Dietary Inclusion

I put a lot of thought, intention, and labor into dietary inclusion when it comes to our food and beverage program here at the Club, which is a fancy way of saying I want you to be able to get what you need around here. Since I first took over the CPC kitchen over 8 years ago, I’ve made sure that there is always a vegan version of dinner, a dairy free version, a gluten free version, as well as a plain foods version that is free of the common allergens. It’s important to me that everyone gets to sit down together and enjoy the same meal that nourishes your soul and your body.

This idea has become so internalized that it’s also taken over my approach to our beverage program. When people get a drink at the bar, it’s actually impossible to tell if they got alcohol or not and I just love that for us. Our fancy mocktail program is something that we put a lot effort into and that we really enjoy creating. Our latest obsession is using sparking apple cider! We love making all the fun syrups, teas and squeezing the fresh juices that make these drinks sing.

It never feels limiting to pay attention to these details, in fact it’s the opposite. Thinking about how to make different versions of what we’re offering pushes us to expand our creativity and encourages us to think outside the box. And I think everyone knows how I feel about that!
